Antioxidant Activity of Imidazole Dipeptides

AbstractIn this chapter we describe the antioxidant activity of imidazole dipeptides and some selected derivatives in various experimental systems, including liposomes, lipids, tissues and protein models. Structures containing an imidazole ring, mainly carnosine-related compounds, are well-known antioxidants. In particular, these properties of imidazole dipeptides are commonly investigated in metal-related liposome model systems. However, the effect of dose dependency and compound type is different in every case. This suggests that the mechanism of antioxidant action proceeds via many paths based on reactions with secondary and final products of peroxidation and some initiators, such as transition metals. Particular attention is paid to free-radical scavenging activity and the ability to trap aldehydic compounds. Also, the properties of some new derivatives, such as pseudopeptides, various acetylated derivatives and β-cyclodextrine conjugates of histidine dipeptides, are shown.
