Systems providing food safety and its perception by polish customers - introduction

Food safety is all necessary to meet conditions and actions that must be taken during all stages of food production and food trade, to ensure the life and health of people. Many people do not think about where the food they buy come from, where it was produced, if in safe conditions. A large part of consumers do not read the labels to see what taste improvers or preservatives are included. And food that we eat affects our health, life. Food that does not meet the requirements, can cause a variety of diseases, including even cancer. The paper is an introduction to the research on the perception of food safety by Polish consumers. In the paper food safety was defined and characterized, scope of the research was described. The research was conducted in the form of an online survey in which consumers took part. In the paper analysis of respondents structure was conducted. The continuation of this paper is a paper of the written by the same authors entitled "Food safety and its perception by Polish customers - results of survey", in which the results of the survey were presented.
